I use Irish mainly products such as McKeough's charcuterie from Connemara or Broaghammons Veal Salami, and Dozio's Ella cheese or his delicious soft cheese, some made specifically for me. I also serve small tapas-style plates of vegan and vegetarian food, including Blackhouse Bakery's absolutely delicious pies and biscuits and Krém Gelato's ice cream (made about 50ft away from us).
A carefully curated selection of very high-end products from Greece and Italy, are also used, some foraged in the wilds of the Dolomites, by specialists, whose actions help preserve this pristine environment.
