Tom's focus is on supporting local Irish producers, from McKeough's charcuterie from Connemara or Broaghammons Veal Salami, Dozio's cheese (Co Mayo). Rivesci Red Onion Marmalade or Cashew Crunch & Lolo's pickles (Co Dublin), Krém ice cream (made about 10m away!). The small-batch handmade crackers are from Co Wexford and the smoked chicken and duck from Co Cork, the trout from Co Kilkenny.

During his travels, Tom is on the look out for high-end products also from small-scale producers and as a result, he has sourced a few select ingredients from Greece and Italy, some foraged in the wilds of the Dolomites, by specialists who help preserve this pristine environment.
Quality since 2014

Tom has set the benchmark by way of focusing exclusively focusing on organic, biodynamic / natural wines - the first in Ireland to do so. He also helps educate about the dangers of e.g. salmon, avocado, palm oil etc through his film club.

Ethical Local Food

The Gallery is Ireland's first Natural wine bar and aims to balance business operation vs care for the planet. It is likely the first bar in Ireland to remove avocado from the menu. This 'Green Gold' is controlled by cartels, resulting in thousands of farmers being murdered, as well as alleged corporations taking over the indigenous water supplies, much like AI data centres are doing even on home shores.


The menu is consciously palm oil free, I don't use any salmon (especially farmed) due to heavy contamination & pollution risks, after all, it is our duty to minimise the impact on the earth. He uses 'Mother's Earth' plant based dishwashing sheets to ensure your dinner ware is free from harmful chemical residue, and sources refillable cleaning products from locally to further support local business.

    If you like a relaxed atmosphere, good chat and interesting music eat here. The best of wines I’ve ever tasted! To top it off the tapas … Amazing flavours, we had mackerel, stuffed peppers and vine leaves, all delicious and an explosion of flavours.
